Shrimp Linguine with Lemon Oil

Servings: 4

Ingredients:
½ cup extra virgin olive oil
1 lemon, zested
16 ounces linguine
2 tablespoons extra virgin olive oil
2 shallots, diced
2 large garlic cloves, minced
16 ounces medium frozen shrimp
¼ cup fresh squeezed lemon juice (about 2 lemons)
1 lemon, zested
1 teaspoon ground sea salt
2 packets Ideal® No Calorie Sweetener
½ teaspoon fresh ground black pepper
3 ounces arugula (about 3 packed cups)
¼ cup chopped fresh parsley

 

Directions:

  • Combine olive oil and lemon zest in small bowl and set aside for 20-30 minutes.
  • Bring large pot of salted water to a boil, add pasta and cook until tender but still “al dente”.
  • Drain pasta and reserve 1 cup pasta water.
  • In a large skillet, heat olive oil over medium heat; add shallots & garlic and cook for 2 minutes; add shrimp and cook until pink.  Add cooked linguine, lemon juice, lemon zest, salt, Ideal® & pepper. 
  • Add arugula, pasta water, strained lemon oil (discard zest).
  • Add chopped parsley, toss and serve immediately.
